The Gozitan fell in love with cooking the way so many of us do, in his grandmother Mari-gwanns tiny kitchen in Xewkija, a village in Gozo whose winding lanes were built to get you lost. No recipe books, no cooking classes. Just honest food, made exactly as it had always been. That is the standard this kitchen still holds.

Grandmothers kitchen was the classroom. The lesson was not to improvise. Not to reinvent. But to continue producing genuine food, true to its roots and cooked the way it was always made. The way history always intended.

Walter’s love of hospitality began in his grandmother’s kitchen in Xewkija, Gozo. A village whose labyrinthine lanes were built to disorient invaders, and whose kitchens have always kept something worth protecting. By the time he entered catering in 1993 at thirteen, he already knew what real food tasted like. He worked his way through every level of this industry, gaining an experience that most in this field never see. From the kitchen to food control to management, and at eighteen rented a restaurant as his own university, to learn the ins and outs of ownership from the inside. After seven years in Gozo, he moved to Malta and started over as a dishwasher. Two years of building, looking and waiting for the right opportunity. On 27th June 2007, it came. Gozitan opened in Paceville with one purpose: not to improvise, not to reinvent, but to bring that experience back to the roots. To serve a cuisine that carries centuries of Maltese history in every dish. The language, the culture, the food. All of it still here, on your plate.

He worked his way through every level of this industry. From the kitchen to food control to management, and at eighteen rented a restaurant just to understand what ownership really felt like from the inside.
