It sounds early. It is not — the long tables go first, and by the last week of November the good dates in the middle of December are largely spoken for. Every year somebody rings on the fifteenth hoping for twelve seats on the twentieth, and every year we have to say no.
What to book, and when
Work parties and family groups want a long table, and that is the thing in genuinely short supply — book those first, and book them now. Smaller tables have more give, but weekends in December fill weeks out.
The kitchen runs the full menu through the season, with the winter dishes properly in their element: rabbit braised long, bragoli, kawlata and the soups that only make sense once it is cold. This is the time of year Maltese cooking was actually built for.
The table you want in December is available in October.
