What December looks like here — the food, the long tables, and the quiet days after the twenty-fifth.
A Maltese Christmas is not a single meal. It is roughly three weeks of them, and the restaurant spends the month in more or less permanent service.
What December is like here
Work parties through the first half, loud and long. Families in the second, often three generations at one table, often arriving at one and leaving at five. And then the quiet stretch between Christmas and New Year, which is the best-kept secret of the season — the island slows down, nobody is in a hurry, and lunch becomes the whole afternoon.
The kitchen runs the full menu throughout. This is peak season for the way we cook: rabbit braised for hours, bragoli, suckling pig for the tables that came to celebrate something, the soups, and the slow roasts that want a cold day and a long table.
Pull up a chair. Pour the wine. Let the kitchen take care of December.
Open every day through the season, from a quarter to noon until a quarter to midnight, in the heart of Paceville.
