There is a category of evening that St Julian's is not obviously built for: two people, a weeknight, and a conversation that needs to be audible.
The season has emptied out, the summer crowd has gone home, and a Tuesday in Paceville is a genuinely calm proposition. The room is mostly regulars this time of year, the pace is slower, and nobody is rushing the table for a second sitting.
The food suits it too. This is soup and slow-braise season — the dishes that take three hours to cook and are best eaten across two.
