Aljotta is Malta’s answer to the great fish soups of the Mediterranean. Built on garlic, ripe tomato, fresh herbs and rice, it carries the flavour of the sea that surrounds the islands.

From the boat to the bowl

A good aljotta depends on good fish, and good fish depends on the morning catch. We keep ours simple and generous, the way it has always been made in Maltese homes, finished with a squeeze of lemon.
