Ġbejniet are small cheeselets, traditionally made on Gozo from sheep or goat’s milk. They come fresh and soft, dried, or peppered, and each version tells you something about the island they come from.

Our founder learned to love food in a tiny kitchen in Xewkija, Gozo, so ġbejniet are close to our heart. We serve them warm in a light batter, or as part of an antipasto, the way they have always been enjoyed.
