Horse meat has a long, traditional place in Maltese cooking, even if it has become rarer on menus in recent years. Braised slowly in a stew of celery, carrots, garlic and onions, it is rich, tender and full of old-island character.

Keeping the tradition alive

Dishes like this disappear when restaurants stop serving them. We keep ours on the menu because preserving Maltese food culture means preserving all of it, not only the easy parts.
